Our Story
The name Tía Consuelo was chosen as a tribute. Consuelo, a much-loved neighbor in the neighborhood, lived on the top floor of the building and shared her life for more than 40 years in that same house with her husband Paco.
Consuelo had no children, but she became a true mother to everyone: warm, affectionate, and always with a smile for those who needed it. When Paco passed away, she continued to live there, surrounded by the affection of those who considered her a grandmother to the whole neighborhood.
When we opened this space, we wanted to pay tribute to her by naming our brasserie after her. It was a simple gesture that meant a lot to her and today remains the root of our identity: a place where good food is combined with the warmth of family.
Today, that essence lives on in every Josper burger and every dish we serve: charcoal-grilled recipes, made with the same love and authenticity that inspired Tía Consuelo, which have become a symbol of Seville for lovers of grilled food.
